One of my life’s aspirations is to address the diabetes epidemic in a way that will actually be successful, using my knowledge as a Psychologist and Chef.
Unfortunately, the current approach to helping people live healthier lives has proven to be ineffective. The barrage of information we have all been exposed to during our lives about what the “right” things to eat and do has mostly not seemed to make a positive difference. The JAMA (Journal of the American Medical Association) report in September 2015 drove this reality home even more when they estimated that 49-52% of the American population is now either pre-diabetic or diabetic. This is serious news that you can learn more about in my previous blogpost.
As human beings, we love our traditions and have a hard time changing habits. Look around and seriously look within yourself—this is simply reality. Fighting this fact will likely just leave you emotionally bruised and perhaps feeling like a victim, especially if you have been depriving yourself of your comfort foods and “guilty pleasures”.
Because of this, I have embraced my calling to be a RENEGADE, because I want you to stop depriving yourself, and instead enjoy the same pleasures you have always loved in order to reclaim your health!
You may be wondering how you can do this, since you know that your habits haven’t taken you to the vibrant health that you really want. Ah yes, this is where creativity and possibility thinking come in and my persistence and nerd-like obsession with food science and culinary experimentation culminated into YUM as my gift to help you and those you love.
So, you can only imagine how excited I was when Shaw TV’s “Run With It” host Christine Blanchette asked me to be a guest on her show and demonstrate one of the recipes from YUM. During the demo on her show (which you can watch on Shaw TV in September, starting September 3rd – airing at 12:30 & 8pm PST or watch on her YouTube Channel if you miss the show), I show you how easy it can be to have your cake (or cookies) and even your frosting and eat it too!
Using the gluten-free, dairy-free, egg-free, sugar-free, gum-free Peanut Butter Cookies from my book YUM, we made the Peanut-Butter Cookie Sandwiches in the book by filling the cookies with YUM’s signature guilt-free Buttercream Frosting that uses no sugar, butter, margarine, or shortening! This Peanut-Butter Buttercream Frosting* uses just 7 ingredients and will make you CRAZY—it is soooo DELISH!!!
*NOTE: You can also make this frosting with other nut, seed or soy butters if you are unable to eat peanut-butter.
