Crazy-delicious, this gluten-free PEANUT-BUTTER COOKIE SANDWICH RECIPE breaks all the rules because even the creamy frosting is healthy too! While standard buttercream frosting is LOADED WITH ICING SUGAR (typically 4 cups to 1 pound per batch), this delectable recipe is entirely free of cane sugar!

Ingredients
- 1 recipe YUM Gluten-Free Peanut Butter Cookies (cooked & cooled) or 2 dozen of your favourite peanut butter cookies (or alternative nut, seed or soy butter cookies)
- ½ cup coconut butter (not coconut oil)
- ½ cup coconut cream*** (see note below)
- ⅓ cup smooth, unsalted, unsweetened peanut butter or other nut/seed butter or soy (nut-free) nut butter alternative
- up to ⅓ cup maple syrup, to taste
- ½ tbsp Chicory Root Inulin with Stevia or favourite sweetener (optional)
- ⅛ tsp cardamom
- ⅓ tsp Himalayan Salt
Instructions
- In a food processor, pulse all the frosting ingredients until creamy, scraping the edges very frequently (do not overprocess).
- Frost cookies immediately or refrigerate first to achieve desired consistency for spreading.
- Store any leftover cookie sandwiches in the freezer (if there are any!), then allow them to soften 10-15 minutes before serving.
***To get coconut cream from a can (the method used in YUM for reasons of practicality), chill can(s) of full-fat premium organic coconut milk in the refrigerator for a few hours or overnight. When you remove the tin from the refrigerator, be sure not to shake it. Open the tin carefully, then spoon out the thick cream from the top of the can and place it in a bowl. Save the coconut liquid below to use in smoothies or other recipes.
